Blueberry Cake

Hey guys!

Sorry I missed day 3 of my valentines posts, my laptop has been playing up so it's been away at the doctors! To my relief it has returned and is good as new. So looks like its time to get caught up!
To distract myself from having no access to the blogging world (it was hard), I baked a cake! So now I want to share it with you all as it was seriously amazing and would be ideal as a homemade valentines meal dessert!


To bake this yourself you will need:
300g blueberries
175g soft butter
142ml soured cream
175g caster sugar
2 tsp vanilla extract
3 eggs
1 tsp baking powder
225g self-raising flour
So to start with, pre-heat your oven to 180C and butter and line your cake tin.
Next you put the butter, sugar, flour, eggs, baking powder and vanilla in a bowl and beat until lighter in colour and well mixed.The mixture at this point tastes delicious and I ate half the bowl!! Once you've completed that-in my case, once I was full of mixture- you need to add 4 tbsp of soured cream and then finally your blueberries! (Leave some for decorating the top of the cake).
Once this is done, place in the oven to bake for 50 minutes. Make sure your cake has risen and is lovely and golden before removing from oven.

Now you can get on with making the frosting!
To make you will need:
200g Philadelphia cheese
100g icing sugar
First off, beat the philly cheese with your icing sugar and the remaining soured cream in a bowl until smooth. And that's it! Simples! Remember to wait until your cake has cooled before adding your frosting for best results.Then just sprinkle on your blueberries, set in the fridge for an hour and enjoy! As you can see from the pictures, many hands make light work! So get your friends and family involved!
